Chef Schaedler has developed a network with producers and Indigenous communities in the north of Brazil and has extensively researched ingredients cultivated and used by Yanomami tribes such as Saúva ants, mushrooms, wild roots, edible flowers, and local fruits. The menus Schaedler has created for REACH to FOREST will include unique ingredients native to the Brazilian Amazon Forest region. Chef Felipe currently runs two award-winning restaurants in the Amazon region and one in the city of São Paulo that has received the Michelin Guide’s special Bib Gourmand Award.
